A Menu to Make Up to?

Here’s what I made for lunch with Jill on episode 405 of Housewives:

Chicken Satay with Basil

4 chicken breasts (boneless/skinless)
Slice into chunks and marinate at room temperature in
1 Tbsp. sherry
3 Tbsp. soy sauce

Heat wok and add a generous splash (2 Tbsp) peanut oil
4 Tbsp. minced garlic

Stir-fry garlic for 30 seconds, then add chicken and sauté until browned – 3 or 4 min. Remove chicken temporarily and set aside in warm place.

Add to garlic/oil:
1/3 cup chicken stock
1+ Tbsp. soy sauce
1 tsp. chili sauce
Mix, then add peanut butter, a spoonful at a time (2 works for us!)

Stir and reduce for a minute or so, just until the sauce is a nice thickness for serving. Add chicken back into the wok and stir well so that chicken is coated and the sauce is sticking a little. Turn off burner and throw in a big handful of fresh basil leaves. Cover wok and let sit for just a few minutes (no more than 5) while you plate the rice. I like to use a big ladle to mold the rice on each plate, then poke a hole in the middle to serve the chicken.

I served this with:

Tomato and Avocado Salad

1 ripe avocado, chopped into small chunks
1 vine tomato, chopped
3 green onions, chopped
3 or 4 green leafy lettuce leaves, sliced or torn up

Combine the above, and dress with Mustard Garlic Vinaigrette

3 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar
2 heaping Tbsp whole grain mustard
1 tsp minced garlic

Stir well and pour over salad – we tend to use about half to ¾ of this recipe for one salad.

    Alex, This lunch sounds so light and perfect for my next “Ladie’s Night”. I’m going to serve it with a fruity white sangria, grilled asparagus and strawberries macerated in wine with short cakes and whipped cream, of course. Thanks for the great idea!

    Alex, this sounds yummy! My child has a peanut allergy, can you share some other fun recipes that are peanut-free? My husband & I have to enjoy our Thai lunches while our daughter is at school. Also, have you thought about doing a cookbook/menu with meals for children (please do some peanut-free/gluten-free)? I think you’re a great Mom who clearly adores her children and Simon is the BEST. :-)

      Amy check out my blog at word press (lolasaidthat) i’ll post some amazing kid friendly recipes for you. While my granddaughter lived with me I had to get very creative. I have tasty ways to include veggies and your kids won’t even know they are there!!

    To bad you didn’t put the same effort into making amends with Jill as you did the menu. You were, as usual, uppity & bitchy. If you rewatch the scene & put yourself in Jill’s shoes, perhaps you will realize that Jill is trying HARD to make things better. You, on the other hand just keep rehashing ancient history. “You did this to me; you said that to me…”. Get over yourself!

      How can Jill make things better if she doesn’t understand and acknowledge what she did to make them bad in the first place? You can’t learn from a mistake unless you see the mistake and own it, can you? And the problem with Jill, in my opinion, is that she can’t just keep her mouth shut and LISTEN — she seems to just go into defensive mode automatically without putting any thought into it.

      To me, Alex seemed to be trying to offer some constructive criticism, aimed at solving a problem. I’ve never seen Alex acting either uppity or bitchy, unlike some of the other housewives, both on this show and on others …
