I’m late with this, I know, but here is the Saag Aloo recipe for the photo I posted on Instagram recently. My boys rarely eat spinach, but they did eat this and I think it’s down to the spices.

1 large white or Spanish onion, chopped
2 large potatoes, peeled and cubed
1/2 to 3/4 pound fresh spinach, washed, stemmed and roughly chopped
2 inch piece of fresh ginger, peeled and finely chopped
1 teaspoon minced garlic (or 1-2 cloves, chopped)
1/4 teaspoon cumin seeds
1 teaspoon turmeric
1 teaspoon garam masala (you do NOT need to spend money on this; make your own HERE.)
1 Tablespoon Olive Oil
1 Tablespoon Butter
Salt to taste

Steam the potato cubes or parboil them until moderately tender but not falling apart; about 10 minutes. Drain and set aside.

In a large saucepan or dutch oven, saute the cumin seeds in butter and oil for about 30 seconds. Add onion and continue sauteeing until it begins to brown. Add potatoes and all spices and continue cooking until spices are fully incorporated and potatoes are soft. Should the bottom of the pan look in danger of burning, add a little water or vegetable stock. Finally, add spinach and saute until wilted. Taste and adjust seasoning as needed. You can also add pepper and lemon juice if you like.
