Preheat oven to 400F while you mix the following:

1 1/2 cups all purpose flour
2/3 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder

1/3 cup vegetable oil
1 egg
1/3 cup milk

1 cup fresh blueberries, washed and stemmed.

TIP: When mixing the wet ingredients, break the egg into a 1 cup measuring cup, then add the oil and finally enough milk to fill the cup. This accounts for eggs of different sizes.

Combine wet and dry ingredients, then fold in blueberries. Spoon into muffin tin, either greased well or lined with muffin cups. Bake at 400 for 20-25 minutes or until a knife comes out clean. Let stand 10 minutes in the tin before removing. Enjoy!
