This recipe makes my mouth water. No joke. Now, I’m a brussels sprouts fan and always have been. I think either you love them or hate them…there doesn’t seem to be any middle ground. File this one under kid-friendly — well — one of our sons LOVES it and the other is a sprouts-hater, so even if they were covered in cotton candy he wouldn’t eat them. BUT…anyone who can handle sprouts who has eaten this…loves it.

Preheat oven to 375, and lightly coat a baking dish with cooking spray or butter. While you’re doing that, prep your fruit and veg. Peel an apple or two — I’ve used Gala, Fuji, Red Delicious…they all work. You want to end up with 2 parts brussels sprouts to 1 part apples.

1 cup peeled and sliced Apples
2 cups Brussels Sprouts, trimmed and quartered
1/4 cup Apple Cider (or juice, or 1/4 cup water with 1/2 tsp brown sugar)
1 Tablespoon Olive Oil
2 Tsp ground Thyme
1/2 Tsp Salt
Freshly Ground Black Pepper to taste

Throw all ingredients into your prepped dish and toss to coat well. Bake for half an hour or until golden but still green. OR, you can cover with foil and steam/bake for 15 minutes, then remove foil and hit it with the broiler for a few minutes to brown the top.
