When it’s really cold out, I love to experiment with all sorts of recipes to add to my repertoire and test my kids’ ever-changing tastes. This year, I hit on a vegetable combination that my kids did not run away from, screaming, with their hair on fire, crying food abuse, all that stuff. They actually ate this. Thinking of making it again tonight… This recipe serves two adults and two kids, so double / triple / halve as needed.

2 Yellow Squash, washed and sliced in rounds
1 Red Onion, diced (in your onion chopper!)
1 large handful Greens — I have used Arugula or Fresh Spinach; they both work
2 slices Bacon, diced
Salt and Pepper to taste.

Sauté the bacon in a frying pan until crispy but not burnt. If you have about 2 Tbsp grease in the pan, don’t add any — if not, add a little olive oil or unsalted butter. Add onion and squash, cook over medium-low heat until translucent. Last, add the greens and continue cooking until wilted.

    This looks and sounds like it would taste AMAZING!!!! Not sure if my kids will eat it, but that’s fine, more for me and my husband, lol. How about sweet potato instead of squash??? Would that taste work with everything all together??
