I’ve been stocking my kitchen with a ton of basics lately…spice blends, stocks and of course, the demi-glace. Yes, you could buy it from Williams-Sonoma, but making it yourself is SO easy, and you can freeze it in portions so there’s little waste. I use this as a base for tons of sauces to serve with red meat.

Dice equal parts (about 1/3 cup each) of the following:
Baby Carrots
Onion (yellow/white/Spanish)
Celery Hearts

3 strips raw bacon, chopped and simmered in water for 10 minutes, then drained

6 Tbsp olive oil

Slowly cook the veggies and bacon in the oil for 10 minutes – do NOT let them brown, just wilt. While this is happening, make a bouquet garni.

Bouquet Garni:  Wrap a handful of fresh parsley, a couple of bay leaves and an equal handful of one other FRESH spice (thyme, rosemary, sage) in cheesecloth and tie it off.

When the veggie mix has hit 10 minutes, add 4 Tbsp all purpose unbleached flour, lower the heat and slowly cook for another 10 minutes. You want the color to deepen to a warm brown. Don’t burn it!! If you do, it won’t thicken properly and will taste like your child stuffed a dirty sock in your mouth while you were sleeping.

In a separate pot, get 6 cups of beef or game stock boiling rapidly. Use good-quality store bought as this process will enrich it for future recipe use. Pour in the vegetable/bacon/flour/oil paste and whisk well. You can use MY whisk, or your own! After fully incorporated, add 1 Tablespoon of tomato paste and the bouquet garni.

Simmer for two hours, skimming off the fat. When you remove from heat, you’re not done yet!! Taste it. Add salt and pepper as you like. Strain it through a chinois, or cheesecloth.

Either use immediately or freeze in one cup portions in those little snap-lid glass or plastic containers. Don’t forget to label WITH quantity, because you won’t remember.
